How do you document that your digital records are authentic when timestamps can change upon transfer from one drive to another?

We use checksums to prove bit-level preservation; the NDSA report Checking Your Digital Content: What is Fixity, and When Should I be Checking It? has been a very useful guide to help our institution establish and improve our fixity-checking for preservation and authenticity.
